Garlic Pesto

Hello, everyone!

Last week I ran a poll on my Instagram story to see what types of recipes you wanted to see this year, and got lots of responses. Seriously appreciate the feedback and ideas so much! So to those of you that responded, thank you. And if you’re not following me on Instagram, find me @thecookingcactus to help with the next poll I have!

With that being said, here is the first follower requested recipe: a sauce! I love making sauces, so I immediately jumped on this request. I decided to make pesto and use the food processor that Austin got me for Christmas. (You guys – I’ve been wanting a food processor for awhile and I lost it when I opened it up!)

If you don’t have a food processor, don’t worry! You can still make this pesto in a blender.

Ingredients

  • 2 cups fresh basil
  • 1/4 cup pine nuts
  • 1/4 cup Parmesan cheese
  • 2 cloves garlic
  • Salt
  • Pepper
  • 1/2 cup olive oil
Ingredients in the Food Processor

Recipe

  • In your food processor (or blender) add all ingredients except the olive oil. (When adding salt and pepper, I would double the amount of seasoning you normally use).
  • Blend/pulse the ingredients together until they’re coarsely ground.
  • Add the olive oil slowly with the machine on until fully combined.
  • Add more salt and pepper if needed.
  • Enjoy!
Garlic Pesto

Pesto is such a great sauce to have on hand because you can use it for so many things. Pastas, sandwiches, you name it! I hope you enjoy this as much as Austin and I do!
